Healed and Caffeinated

Good morning! Today’s sunny and warm adventure beckons us west of the cities. After being unwell for a few weeks, it feels amazing to finally step outside, bask in the sunshine, and rejuvenate ourselves with fresh air. Our journey will lead us to Anoka and along the beautiful Mississippi River on our way to Big Lake, reminding us of the joy that awaits when we embrace the outdoors.

Our adventure began at the charming Sparky’s Cafe, a cozy little spot that may be snug on seating but absolutely overflows with flavor! The moment the food arrived, I knew we were in for a treat. I devoured a skillet brimming with crispy bacon, savory ham, and zesty sausage, accompanied by two perfectly cooked eggs that had me dreaming of breakfast perfection. On the side, I indulged in golden wheat toast and cheesy hashbrowns that were pure delight. Kari opted for a half portion, which in hindsight, might have been the wiser choice given the mountain of deliciousness on my plate! Sparky’s is a true hidden gem that I cannot recommend highly enough. And if you have any room left, make sure to leave some time to explore the delightful nearby spots for sweet treats!

Our next adventure took us to Ember Coffee in Big Lake, and what an incredible stop it was! As soon as we stepped inside this gorgeous coffee shop, we were enveloped by the rich, mouthwatering aroma of freshly brewed coffee. The ambiance was so inviting, with the lively coffee bar up front and cozy seating areas tucked away in the back, perfect for unwinding.

The selection of delicious treats was dazzling, and the ice cream flavors were practically endless! Kari chose a Ginger Snap cookie that was not only delectable but absolutely hit the spot. Meanwhile, I indulged in a pumpkin bar with luscious cream cheese frosting that was simply divine—full of rich pumpkin flavor and just the right amount of sweetness.

Then, the grand finale: the coffee! I ordered a Humboldt latte topped with made-from-scratch caramel, and let me tell you, it was nothing short of spectacular. The Salty Canadian had Kari swooning! Every sip was pure bliss—Ember Coffee definitely exceeded all expectations!
